( It may look like raw mincemeat, but that's just the ketchup - it tastes
better than it looks. Honest.)
This is my Mother-in-law's recipe.Ingredients:
This is cheap, nutritious, and tastes a lot better than it sounds. Feeds about 2-4, depending how hungry you are. Cook the rice, and try to dry it a bit if you can (so it isn't all sticky). I put it in a large bowl, covered in tin-foil and leave it in the oven for a 1/2 hour on a low heat - this leaves it quite fluffy, and not all stuck together. In a large pan, or frying-pan, fry up the onions (on a high heat) until they are becoming translucent. Add the bacon, and continue to stir-fry this until the bacon is nicely cooked. Stir in the rice, mix it all up and continue frying (on a medium heat). Stir in a large amount of ketchup. The whole bottle, it you like ketchup as much as I do. It needs to be very very ketchuppy. When the ketchup is all mixed in and heated through, serve and eat. |
